WHere is a home-style version of a beverage from our latest drinks list. It's a batch prepared mix that's bursting with flavours associated with Christmas time, rendering it excellent for hosting a holiday party. Any leftover citrus syrup for brunch beverages, puddings, or to mix additional servings of the drink.
Bikini Recipe
Serves 10 servings
For the Clementine Syrup (yields 750ml)
300ml recently pressed clementine juice
200ml recently pressed lemon juice
500g fine sugar
Ingredients for the Premix (produces 850ml, enough for 10)
400ml premium vodka
100ml dry gin
150ml peach liqueur
200ml clementine cordial (from the recipe above)
Whole cranberries, to garnish
Mandarin essential oil, to finish
Instructions
To prepare the Cordial: Put all the ingredients into a pot, bring to a gentle boil, stirring to dissolve. Then, remove from the burner allowing it to cool down fully. Decant into an sealable bottle, cap it and refrigerate it in the refrigerator, it will last for up to four weeks.
To make Batch Mix: Pour all the liquids into a large bottle, allow it to infuse for an hour, then filter it preferably using a fine cloth, so it's perfectly clear.
For serving: Measure 85ml from the batch mix to a stirring glass filled with ice, and agitate gently for a minute to chill. Strain into a cold coupe glass or a similar vessel, decorate with the cranberries and finish with a light spray of the essential oil over the drink.
